Trazabilidad en la cadena de suministro alimentaria: Un estudio bibliométrico

Resumen


Debido a los riesgos alimentarios presentados desde hace décadas, las organizaciones se han visto en la necesidad de crear sistemas de trazabilidad con el objetivo de rastrear el producto y compartir información entre los miembros de la cadena de suministro que permitan minimizar riesgos, aumentar la calidad y la confiabilidad de los alimentos, cumpliendo con la normatividad requerida. Este documento presenta un análisis bibliométrico sobre la trazabilidad en la cadena de suministro de alimentos en el periodo comprendido entre los años 1998 a 2020, bajo una metodología de alcance exploratorio-descriptiva a partir de la base de datos de Scopus. Los resultados a través de indicadores de calidad y cantidad permiten identificar los temas claves de investigación, las interrelaciones, además de los patrones de colaboración en el campo. Entre los hallazgos se evidencia que la cantidad de publicaciones en los últimos 5 años ha incrementado en un 17.3% sugiriendo el alto nivel de importancia que representa la trazabilidad en las cadenas de suministro de alimentos, al permitir que sea posible obtener y gestionar información en tiempo real, además de garantizar la inocuidad y seguridad de los alimentos bajo herramientas tecnológicas que hacen posible que el seguimiento sea global e interconectado.
